Greek Goddess Salmon & Annie's Homegrown Giveaway

Good morning! If you've been following this blog you've probably noticed that I love ORGANIC everything. I've been eating this way for the past several years and let me tell you, it makes a world of a difference!

When Annie's Homegrown asked if I would make a recipe using their ingredients I was beyond excited! Their brand pretty much symbolizes all the things I look for in foods! Ingredients that contain no GMO's, synthetic products, preservatives and are organic. Sign me up! Another thing that I love about this brand is that they offer Gluten Free options. As a parent of a gluten free child I know how difficult it can be to find products that don't contain gluten. So thanks Annie's!

With that being said, onto today's recipe! Even though summer is coming to an end I can't help but crave the light, fresh recipes of summer! So today I wanted to share with your a salmon recipe that I made last week. This is SO DELICIOUS and I just know you're going to love it :)



Ingredients:
  • 1 lb. Fresh Atlantic Salmon
  • 1/4 cup Annie's Homegrown Goddess Dressing
  • Brown Rice or Quinoa (I used Quinoa and Brown Rice from Seeds of Change)
  • 1 Cucumber
  • Cherry Tomatoes
  • 1 Lemon
  • Feta Cheese
  • Kalamata Olives

1. First, gather up all your ingredients! I made 1 lb. of Salmon but feel free to make as much or little as you would like.

2. Slice a lemon into thin slices and set to the side.


3. Cut your salmon into smaller single portion fillets and place skin down on a pan.

4. Drizzle a few tablespoons of Annie's Homegrown Goddess Dressing on your salmon fillets.


5. Place lemon slices on top of your salmon fillets.

6. Put in the oven and turn your broiler onto low. I like to cook my salmon on a very low setting for longer because I think it turns out more moist this way. Plus it gets a little bit more time for the dressing to really marinate the fish!


7. While the salmon is cooking, it's time to prepare your rice!

8. Slice up cucumbers, cherry tomatoes and kalamata olives into small pieces and set aside.


9. Prepare your rice according to instructions. I just used a simple heat and serve rice but feel free to cook any rice or use a rice steamer, etc.


10. Once your rice is prepared, mix in feta, tomatoes, olives and cucumbers. I heated up the rice mixture slightly so all the components were heated.


11. Check on your salmon. You'll know it's finished when it flakes easily with a fork and no longer has a pink center.

12. Serve salmon on a bed of the meditteranean rice and enjoy!



 
Doesn't this look awesome! Salmon. Annie's Goddess Dressing. Feta. Kalamata Olives. Cherry tomatoes. Brown rice and quinoa. Pretty much a match made in heaven! Seriously, I could have drank this dressing straight from the bottle. I'm not kidding, it's that good!!
